A Pin a Day: Cranberry Orange Cookies

It was a Tuesday afternoon and Mike was at work, so I decided to get my bake on.  I found a recipe for Cranberry Orange Cookies.  I thought it would be a nice choice for us to try this recipe and I have never made one like it before.  I bought dried cranberries and chopped them up, but you could probably use fresh ones as well.  As I was mixing, I decided to throw in 1/2 cup of white chocolate chips as well.  I really liked that the recipe called for them to be rolled in an orange infused sugar before baking.  They were really good and I made them in a small bite size so they wouldn't be too filling.  My only complaint on these might be that they dried out quicker than I would have liked, so I need to share them with friends next time to avoid that problem.

Casa De Mi Padre: Not Just a Will Ferrell Movie

It was a Saturday evening and we were looking for a new place to try.  Thanks to Yelp, we found one in Casa De Mi Padre.  It was so new that the various map apps argued as to where it was located.  We walked in to a dimly light, relaxed atmosphere.  We got seated right away, but service seemed a little slow.  We were served chips and 3 different types of salsa in a cute container.  The salsas were very good and the chips were okay.  We ordered margaritas and they were very generic tasting.  When our meals came, we were quite overwhelmed.  I ordered the steak tacos al carbon and Mike ordered the tacos al pastor.  Each meal was also accompanied by a big plate of rice and beans.  Our tacos were amazing and we got so much food.  The rice was different with almost a buttery taste and the refried beans were great too.  We had skipped appetizers in hopes of getting a dessert, but there was no room left.  Mike finished his meal, but I didn't even come close.  Maybe next time we will split a meal so we can try dessert.  We got the check and I realized that there was a mistake, they had forgotten to charge us for the margaritas.  I talked to the hostess (owner), who informed me that they were complimentary, as they didn't have their liquor license yet.  I am hoping that maybe once that happens, the margarita quality improves.  We loved the food and hope this cute little place makes it.

A Pin a Day: Crockpot Buffalo Chicken Chili

It was another Sunday and another crockpot day.  This time, I selected Crockpot Chicken Chili.  Once again, we love buffalo chicken, chili, and I get tired of the same old recipes.  We have a pretty good routine when it comes to crockpot meals, where I do the mixing and most of the prep and I have Mike do all the chopping.  (Its safer that way!)  I changed up the recipe a little by using thawed chicken breasts instead of frozen and I cooked it about 4-6 hours instead of 8-10.  It smelled delicious as it cooked all day and we were excited to try it.  It was really good and we served it with oyster crackers and cheese.  It was a great meal with plenty of leftovers.  I like things kicked up a notch, so next time I may add a little more buffalo sauce so its a bit spicier, but otherwise, a great meal.

A Pin a Day: Creamy Chicken and Wild Rice Soup

On Sundays, I love to sleep in and throw some food in the crockpot for dinner.  A few weeks ago, I tried Creamy Chicken and Wild Rice Soup.  I started on the chicken and grabbing all the ingredients and when Mike woke up, he chopped up the onions, carrots, and celery.  This was a good soup, however, I don't feel like it was super creamy.  Also, I misread the amounts and we put in way more carrots and celery than required, but it was still good.  It made plenty of leftovers, which is a definite requirement of Sunday Soups.  Its starting to get warmer here so my soup days are numbered, but this is one I will be trying again in the fall.

A Pin a Day: Burrito Bowls

A few weeks ago, we tried Burrito Bowls.  We used this recipe as a basis for our dinner.  We love burritos/burrito bowls and this was a great way to make sure we each got what we liked.  Mike chopped up red peppers, tomatoes, and cilantro for the burritos.  I cooked the chicken in a sauce I picked up at the grocery store.  I also made some basmati rice and added lime and cilantro after it was cooked.  In addition, we also had corn, black beans, shredded cheddar, lettuce, salsa, and a southwestern ranch dressing.  I had tortillas available for Mike and I just layered mine all in a bowl.  This was a great meal and had plenty of leftovers as bowls, burritos, and salads.  This was definitely a good choice for us.

A Pin a Day: Salted Caramel Blondies

A few weeks ago, before I got sick, I felt the need to bake.  I don't do it as often because we can't or shouldn't eat a whole batch.  Every once in a while, I just like to have something sweet in the house.  After dinner, I got my ingredients ready to make Salted Caramel Blondies.  I always love the combination of sweet and salty so I thought this would be perfect for me.  I also thought maybe Mike could take the leftovers to work.  The recipe was fairly easy to make and was definitely tasty.  The thing that took the longest was melting the caramels.  We let them cool completely and then drizzled them with a little bit of caramel syrup.  They were so good and they were just gooey enough that they probably wouldn't travel well, so we had to keep them all at home.  These would also be delicious with a scoop of vanilla ice cream.

A Pin a Day: Crockpot BBQ Chicken

Sometimes I find myself in the mood for some BBQ, but don't feel like going out.  We also don't have a grill yet.  So, we tried Crockpot BBQ Chicken.  I read the entire recipe and comments before I started this one as the concept of BBQ chicken in the crockpot intrigued me.  I did change things up a little bit to suit my needs.  First, I used chicken breasts that were completely thawed so I cooked it about 3.5 hours on low instead of 4-6 hours for the frozen breasts.  Next, I read the comments on the sauce being a little bit runny so I left out the vinegar completely.  Finally, we like things hot so I was heavy handed on the red pepper flakes.  While my chicken was cooking, I made a pasta salad to accompany my chicken.  It was really good and we definitely fought a little bit about who got the leftovers the next day.  The only thing missing was the BBQ texture.  This recipe may also be good if you shredded the chicken to put on buns or in tortillas for tacos.  Overall, this was a great recipe that we will try again.  It was so good, that I forgot to take a picture until it was all gone.  

A Pin a Day: Skinny Chicken and Broccoli Alfredo

Since I'm stuck at home sick today, I figured it would be a good time to catch up on blogging.  I have several to go so be prepared for lots of posts today.  Last Sunday, we tried this Skinny Chicken and Broccoli Alfredo. On a rare occasion, I actually followed all the directions very carefully.  It was pretty easy to make and the thing that probably took the longest was waiting for the water to boil for noodles.  I am not a true alfredo fan, as I usually prefer a red sauce.  This one was fairly healthy and pretty easy, but needed a little bit more flavor.  Mike added a little bit of pasta seasoning to the leftovers and said it was pretty good.  It made a huge batch, so next time, I may consider making a half recipe and adding a bit more seasoning.  Overall, it was a decent and much healthier recipe.

A Pin a Day: Pizza Bread

During Lent, I work hard to make sure that Mike doesn't eat meat on Fridays.  However, eating tortellini every Friday gets old after a while.  Last Friday, we tried a recipe for Pizza Bread.  It was super easy and pretty tasty too.  I only did one loaf of bread since it was just the two of us and that was still more than enough.  I just used pizza sauce and mozzarella cheese since that's what we had around the house, but you could definitely do a variety of toppings.  I also only heated my oven to about 425 because I thought the recipe's oven temperature seemed a little bit high.  I paired the pizza bread with salad and it was a nice, light meal.  This definitely gives us another option during Lent.

Pin a Day: Cheesy Honey Mustard Chicken

 I am finally working to catch up on all the recipes I've made over the past few weeks.  Hopefully, this reminds me to stay on track a little bit more.  Our next recipe is Cheesy Honey Mustard Chicken.  We love chicken and I am always trying to find new ways to change it up, so I tried this recipe.  I had to make a modification or two, but it still turned out great.  I ran out of honey so I used both honey and a little bit of honey mustard to make up for the honey I didn't have.  I also used a little bit more bacon and just put a slice on each chicken breast.  It was really good, especially paired with the risotto and carrots that I made.  It cooked quickly and without any problems, so it is definitely a recipe worth repeating.

Oscars 2014

I love the Oscars!  I have a long love of them and fortunately, Mike is a willing participant in my Oscar shenanigans.  I think this is due to the large spread of food, I love to create.  I've been celebrating Oscars since college or maybe even high school.  I started off simple with watching with my friend, Andy, and my sister.  We loved to print out score cards and see who could get the most picks.  I usually lost because I go for funny names and what I like, rather than what I think other people will like.  I remember a few Oscar parties in college- one with my friends, Becca and Maribel, where I truly developed my love of catty criticisms of Oscar wear and styles.  Another Oscar adventure had Andy and me at a lake house, dressing up, and cooking fancy foods.  Post college, there were a few more parties, some involving much travelling (not on my part), but the one thing that never changed was the excitement I felt.  This year was my 4th Oscars in Austin, with the first year being our visit to see if this city was right for us.  In hindsight, I could have probably had a party this year, but I wasn't organized enough.  So, I settled for making food, my comfy couch, filling out ballots with Mike, and having my phone ready for endless catty texts to and from my sister, who did a last minute ballot to compete with us.  Now, on to the food.  I made 6 new recipes this year, so I was busy up until the red carpet.  First, I started with Strawberry Sangria aka 12 Years a Sangria.  What's an event without a signature cocktail?  The most difficult item for this recipe was finding a strawberry liqueur.  I purchased the only bottle in Specs.  This recipe was great-strawberries, wine, sugar- all good in my book.  The recipe called for your favorite type of white wine, I choose pinot grigio, so it wouldn't be too sweet.  The only downfall was that many of the strawberries sunk to the bottom of the pitcher, so I didn't get to enjoy as many boozy berries.  For my next treat, I made some Cheddar Bacon Dip aka Bacon of Wall Street Dip.  This was any easy recipe to make and sounded like it would be delicious.  It had many of my favorite things- sour cream, cheese, bacon, and ranch powder.  It recommended letting it sit in the fridge for 24 hours, but I didn't have time for that.  So, I made it as one of my first recipes and figured that would have to do.  I served it with Doritos, as shown in the picture.  We used Baked Doritos for a splash of healthy.  I really wanted to like this dip, but it was way too salty.  This says a lot if you know who I'm related to.  (I'm looking at you, mom and Aunt Sallie).  I'm not sure if it was the bacon bits or the ranch dip that was too much, but after that night I did not eat any more.  Mike commented that he liked beer dip better and maybe I could just add a little bacon to that recipe. For my next recipe, I knew I needed something sweet.  I made 3 Musketeers Fudge Brownies aka Her Brownies. This recipe was time consuming, but worth it.  Step One, make the brownies from a box mix.  Step Two, let it cool and put a layer of 3 Musketeers bars.  I was antsy so I didn't let it cool completely and I also used the mini size instead of fun sized so I didn't have to cut them in half.  Step 3, make the fudge.  This was the most time consuming step.  I would have tried to melt the chocolate in the microwave, but this was during the broken phase so that was out.  Melting on the stove top made me think of the recipe for fudge.  I used 2 different dark chocolate chip types because that is what we prefer.  Once the chocolate was melted, I poured that on top of the 3 Musketeers layer and stuck it in the fridge.  These were excellent.  They were very rich and my favorite part was the fudge layer.  These will definitely be made again.   Next, I made some Saucy Asian Meatballs aka Nebraska Balls.  I made these ahead of time, with the intent to bake them right before the red carpet.  I made a few substitutions and changes with this recipe based on available ingredients.  I used beef for my meatballs and used my handy cookie dough scoop to help make my balls even in size.  In the meatballs, I used olive oil instead of sesame oil because that's what I had.  I also made my own hoisin sauce with BBQ sauce and soy sauce.  The meatballs were good, but they took forever to cook.  Even when we ate them, they were medium well at best.  They also really added some new odors to my fridge with all the garlic.  They were yummy though and I will definitely try these again.  Next up were some pretzel sticks aka Captain Phillips' Pretzels.  I was going to make them from scratch, but I was running low on time.  I had a pretzel kit from Auntie Anne's that took away the measuring step and seemed pretty easy so I used that instead.  It was still time consuming and definitely tested my patience.  The end result was pretty good, however, I still think the frozen ones taste better.  I served these with a few different types of mustard.  For my final recipe, I went with a turkey club wrap aka Dallas Buyer's Club wraps.  This was a quick and easy recipe.  I left out the tomatoes, as Mike isn't always a fan.  I also used bacon bits vs. cooking some bacon.  Again, I should not have used these bacon bits, as they were really salty.  However, this was really easy and could be done with a variety of different meats and cheeses.  Overall, I felt the menu was a little bit salty, so I was glad I made the sangria and brownies.  I did finish everything right as the red carpet started so I plenty of time to enjoy and eat.  Once again, I lost to my sister on the voting, but we still had a great time.  Next year, I hope to throw a bigger party and spread/share my Oscar love.

Aloha Kona!

Last weekend, we headed out to the Domain to see the Lego movie and do some light shopping.  We decided to hit a new spot for dinner after the movie.  The movie was awesome and did not disappoint.  I couldn't find anything to buy while shopping, meaning I'm probably being picky.  Dinner at Kona Grill, however, was just meh.  We made reservations through Open Table and Yelp, which is incredibly easy to do from your phone.  We showed up a little bit early and not super hungry after munching on popcorn and candy at the movies. (How can you not?)  They got us seated right away and we pondered over the menu.  It was largely Asian and Hawaiian inspired with lots of fish and sushi dishes.  I don't eat my friends from the sea, so I ordered the pad thai.  Mike opted for the mahi mahi and an order of crab sushi.  My food was fine with the perfect level of spice to it and Mike liked his mahi mahi.  The sushi was nasty looking- the crab was deep fried and looked like bugs.  This may be what its supposed to look like, but it grossed me out.  While edible, our food was just okay, so likely we will not return.  It may have just been poor choosing on our part, which we understand, but we were underwhelmed.

A Pin A Day: Slow Cooker Buffalo Chicken Macaroni and Cheese

A few weeks ago, I tried this Buffalo Chicken Mac and Cheese recipe.  This was an ideal meal for Mike and I because we love buffalo chicken and mac and cheese.  I liked that it was a slow cooker recipe and parts could be made in advance and also it was only supposed to take about 2 hours to cook.  I made the chicken the day ahead of time and was set to make the rest after a trip to get nails done and a quick swing by the mall.  Everything ran smoothly on my trip out and I even got to stop for some unexpected, but much needed coffee with my friend, Linda.  I got home and started on the recipe, which took longer than expected.  I did change the recipe a little bit as I went.  I omitted the vegetables (because I forgot to buy them).  It took about 2.5 to 3 hours to cook in the the end.  It was yummy, but I would probably make a few more changes.  In the future, I would add the vegetables, double the pasta, and maybe precook the pasta so it didn't take as long to cook.  Overall, this was a good meal and with a few modifications, it could be turned into a great meal.

A Pin a Day: Chicken and Dumplings Casserole

I had really high hopes for this Chicken and Dumplings Casserole recipe.  Unfortunately, it was only okay at best.  I love chicken and dumplings, but I do not always enjoy the amount of time it takes to make them.  I can fully admit to not being super patient!  This recipe was easy, but not really fast and it didn't really inspire me to give up my mom's recipe.  It lacked flavor and imagination.  It did provide plenty of leftovers, but between the microwave not working and the fact that it was only okay, we really didn't eat any leftovers.  I think this recipe could be improved by adding some frozen vegetables and maybe a little more seasoning.  But with all the great recipes out there, I don't think I'll waste too much time on one that was only alright.

Happy National Margarita Day!

Okay, so this was about a week and a half ago, but its always a happy day with a margarita!  Once I discovered it was National Margarita Day, I knew we had to partake in the celebration.  We decided to hit up a local place that was highly recommended by my friend, Mark.  It was a little bit crowded but we could sit immediately if we didn't mind a seat right by the door.  First up, we ordered our margaritas and queso.  I got the sangria swirled margarita and Mike ordered the traditional on the rocks.  Previously, we had ordered the prickly pear margaritas here, which are not only beautifully pink, but quite delicious as well.  We enjoyed these while waiting for our main course.  I was feeling steak so I ordered the tacos al carbon and Mike got the enchiladas.  All the food was amazing and we left quite satisfied.  We will be back again and I believe this may be our go to Mexican place.  The biggest thing we have to remember is that its a small place and fills up fast, so we should consider making it a weeknight treat!

A Pin a Day: Sassy Tailgate Sandwiches

Recently, I have been cooking a lot more, with quite a bit of success and last Friday's recipe was no different.  I tried these Sassy Tailgate Sandwiches.  I thought they were a crock pot recipe on first glance, but realized later just how easy this recipe would be.  While Mike was napping, I took care of the whole thing.  My one substitution was using Havarti cheese instead of Gruyere, simply because Target doesn't carry Gruyere.  The sandwiches were easy to put together- I sliced the rolls, added the ham and cheese and spread on the cream cheese.  I really loved the cream cheese with onion and chives and it has made a great dip since I used it for the recipe.  After I drizzled the marinade on the sandwiches, I impatiently waited for 20 minutes until they were ready to bake.  While they were baking, I got some baked beans and salad ready and we had a great meal when they were done.  The sandwiches were delicious.  The buttery marinade made them soft and brought out some great flavor.  They were even great as leftovers, which is always a plus in my book.  While the ham was great, I can see trying several different meat and cheese combinations with this basic idea.

A Pin a Day: Garlic Chicken

Last week, we added a new challenge to cooking at our home.  We can no longer use our microwave!  There was a minor incident where something caught fire and now it smokes when we use it, so until its fixed, its all old school cooking!  This was a not a challenge with Wednesday's recipe Garlic Chicken.  This was an easy recipe and all the ingredients were things I typically have on hand, so I have a feeling it will join our list of regular favorites.  Heating the garlic in the olive oil made my kitchen smell great and definitely got Cecil's attention.  This is even a recipe that Mike could do as its a breaded chicken that doesn't include using an egg to coat the chicken.  (He's not a fan of cracking eggs!)  I served the chicken with rice and salad.  It was really good and Mike loved it.  It was also pretty simple and heated up nicely the next day.  I look forward to eating this one again!

A Pin a Day: Slow Cooker Creamy Chicken Fajita Soup

Last Sunday, we had a lazy Sunday (my favorite), where we slept in, went out to lunch and grocery shopped.  While we watched Olympics, I put together this yummy Slow Cooker Creamy Chicken Fajita Soup.  I did make a  modification to the recipe as I went, by using chicken broth instead of water to cook in the soup.  I thought it would add a little more flavor.   It was supposed to take 2-3 hours on high, but it was taking much longer for the chicken to cook.  So we ended up making a pizza for dinner and letting it cook all evening.  On Monday, we finally got to try our soup.  We added a little cheese, tortilla chips, and sour cream for garnish.  I thought it was really yummy and look forward to trying it again.  Mike felt like it wasn't spicy enough and that another chicken soup I had made was a little bit better.  Next time I make this, I may try to spice it up a bit and make sure that I have plenty of time to cook it all day.

A Pin a Day: Crockpot Orange Chicken

Last week was another week of trying new recipes from Pinterest.  I had randomly gone through and selected several recipes, crafts, and other to dos for the next 6 months.  We love Asian foods and I find that many Asian recipes are easy to make and also are great leftover.  For my next Pin a Day, I tried this crockpot orange chicken recipe.  Like many recipes, this was pretty easy.  I, of course, changed a few things as I went.  I cooked on low heat.  I left the house to run a few errands and I didn't want to overcook my chicken.  I also cooked it in chicken broth.  I hate cooking chicken to where it dries out.  I also probably cooked it 3.5-4 hours on low.  When I added the sauce to the chicken, I also started some rice on the stove top.  When the rice finished, I popped a bag of steam in bag broccoli in the microwave.  Overall the meal was good, it wasn't the best orange chicken I've ever had.  I definitely wished the sauce was a little thicker or spicier.  It was very easy and made plenty of food for dinner and leftovers.  I may try this one again with a few modifications to make it work a little bit better for us.

A Pin a Day: Salsa Chicken Casserole

Last Sunday, I returned to trying new recipes.  I love anything chicken so I tried the a salsa chicken casserole recipe.  It was quick and easy to make and included several ingredients that I knew Mike and I would enjoy.  While the recipe was easy to make, I didn't feel like it was necessarily quick.  It took longer than I thought for the chicken and rice to cook.  I'm not sure if it was due to the fact that I used basmati rice or that the casserole was too full that the chicken didn't cook very fast.  The casserole was pretty good when it was finally ready and we paired it with salad to round out the meal.  In addition, there were plenty of leftovers for lunch last week.  Next time, I may try a different type of rice, cubing the chicken or cooking it a little bit longer.
