A Pin a Day: Crockpot BBQ Chicken
Sometimes I find myself in the mood for some BBQ, but don't feel like going out. We also don't have a grill yet. So, we tried Crockpot BBQ Chicken. I read the entire recipe and comments before I started this one as the concept of BBQ chicken in the crockpot intrigued me. I did change things up a little bit to suit my needs. First, I used chicken breasts that were completely thawed so I cooked it about 3.5 hours on low instead of 4-6 hours for the frozen breasts. Next, I read the comments on the sauce being a little bit runny so I left out the vinegar completely. Finally, we like things hot so I was heavy handed on the red pepper flakes. While my chicken was cooking, I made a pasta salad to accompany my chicken. It was really good and we definitely fought a little bit about who got the leftovers the next day. The only thing missing was the BBQ texture. This recipe may also be good if you shredded the chicken to put on buns or in tortillas for tacos. Overall, this was a great recipe that we will try again. It was so good, that I forgot to take a picture until it was all gone.
