A few weeks ago, we tried Burrito Bowls. We used this recipe as a basis for our dinner. We love burritos/burrito bowls and this was a great way to make sure we each got what we liked. Mike chopped up red peppers, tomatoes, and cilantro for the burritos. I cooked the chicken in a sauce I picked up at the grocery store. I also made some basmati rice and added lime and cilantro after it was cooked. In addition, we also had corn, black beans, shredded cheddar, lettuce, salsa, and a southwestern ranch dressing. I had tortillas available for Mike and I just layered mine all in a bowl. This was a great meal and had plenty of leftovers as bowls, burritos, and salads. This was definitely a good choice for us.
