I had really high hopes for this Chicken and Dumplings Casserole recipe. Unfortunately, it was only okay at best. I love chicken and dumplings, but I do not always enjoy the amount of time it takes to make them. I can fully admit to not being super patient! This recipe was easy, but not really fast and it didn't really inspire me to give up my mom's recipe. It lacked flavor and imagination. It did provide plenty of leftovers, but between the microwave not working and the fact that it was only okay, we really didn't eat any leftovers. I think this recipe could be improved by adding some frozen vegetables and maybe a little more seasoning. But with all the great recipes out there, I don't think I'll waste too much time on one that was only alright.
