A Pin A Day: Slow Cooker Buffalo Chicken Macaroni and Cheese

A few weeks ago, I tried this Buffalo Chicken Mac and Cheese recipe.  This was an ideal meal for Mike and I because we love buffalo chicken and mac and cheese.  I liked that it was a slow cooker recipe and parts could be made in advance and also it was only supposed to take about 2 hours to cook.  I made the chicken the day ahead of time and was set to make the rest after a trip to get nails done and a quick swing by the mall.  Everything ran smoothly on my trip out and I even got to stop for some unexpected, but much needed coffee with my friend, Linda.  I got home and started on the recipe, which took longer than expected.  I did change the recipe a little bit as I went.  I omitted the vegetables (because I forgot to buy them).  It took about 2.5 to 3 hours to cook in the the end.  It was yummy, but I would probably make a few more changes.  In the future, I would add the vegetables, double the pasta, and maybe precook the pasta so it didn't take as long to cook.  Overall, this was a good meal and with a few modifications, it could be turned into a great meal.
