Last Sunday, I returned to trying new recipes. I love anything chicken so I tried the a salsa chicken casserole recipe. It was quick and easy to make and included several ingredients that I knew Mike and I would enjoy. While the recipe was easy to make, I didn't feel like it was necessarily quick. It took longer than I thought for the chicken and rice to cook. I'm not sure if it was due to the fact that I used basmati rice or that the casserole was too full that the chicken didn't cook very fast. The casserole was pretty good when it was finally ready and we paired it with salad to round out the meal. In addition, there were plenty of leftovers for lunch last week. Next time, I may try a different type of rice, cubing the chicken or cooking it a little bit longer.
