Pin a Day: Teriyaki Chicken Rice Bowls

My summer time meal goals are pretty simple.  I try to make foods that are quick, tasty, healthy, and that don't heat up the kitchen too much.  Last night, I accomplished that with Teriyaki Chicken Rice Bowls.   I started by boiling water for rice.  Once the rice going, I got started on the chicken.   I cut the chicken into bite sized pieces and seasoned them with salt and pepper.  I added a little bit of oil to a nonstick skillet, heated it up, and cooked the chicken.  While the chicken was cooking, I mixed a sauce of soy sauce, apple cider vinegar, brown sugar, garlic, ginger, and cornstarch.  I added the sauce to the chicken and cooked it until it thickened up.  I also steamed some frozen broccoli in the microwave.  After everything cooked, it was dinner time.  We added rice, broccoli, and chicken to our bowls and bon appetite!  This meal was tasty-we always love Asian inspired dishes.  It didn't make a huge mess and cooked pretty quickly.  Overall, we were very happy with this choice.
