Dream Dinners: Sweet and Sour Chicken with Sweet Gingered Carrots
Last night, I had a meeting at work so Mike made one of our Dream Dinners meals. He started by making some rice to serve with the chicken and then got started on the chicken. He heated up some oil in a skillet and cooked the chicken for 3 minutes on each side to brown it. Next, he added the sauce to the chicken, turned down the heat, and cooked it for about 15 minutes. At the end of the cooking process, he heated up a small skilllet and sautéed the carrots in the butter blend for about 5 minutes. We served the chicken over the rice and put the carrots on the side. This was a really yummy dish. I loved the flavor of the sauce and the carrots were a perfect pairing. The only thing I didn’t love was the baby corn, which I kept on the side for Mike. We really liked this meal and would be happy to make it again.
