Dream Dinners: Loaded Pulled Pork Bites and Fully Loaded Mashed Potatoes

Last night was another delicious dinner night, thanks to Dream Dinners.  I made the Loaded Pulled Pork Bites with a side of Fully Loaded Mashed Potatoes.  This was a unique meal in that it was not prethawed in the fridge.  I preheated the oven to 375 and let the biscuits sit out of the freezer for about 20-30 minutes on my prepared baking sheet.  Meanwhile, I ran the pulled pork under warm water to loosen it up.  I put the pork in a medium pot and simmered over medium heat about 20 minutes, stirring occasionally.  Once the biscuits had thawed, I flattened them into circles and topped them with pulled pork and cheddar cheese.  I put the baking sheet in the oven for 15 minutes to bake.  While the pork bites were cooking, I put the potatoes in a sauce pan and cooked them over medium heat, stirring often.  The potatoes and pork bites were both done at about the same time, thanks to good planning on my part.  The meal was very simple, but also delicious.  The pork bites were well cooked and had great flavor.  The biscuits were fluffy and tender and the pork was slightly spicy that paired great with the cheese.  The potatoes had cheese, bacon, and scallions and tasted just like twice baked potatoes.  They were amazing.  We will definitely be repeating both of these items next time they are available.
