Pin a Day: Grilled Lime Chicken with Black Bean Salad

I have been super busy lately, but it's time to get back to blogging.  Another new recipe we've tried recently is this Grilled Lime Chicken with Black Bean Salad.     I loved how tasty and healthy this recipe is.  It was also pretty simple and had the potential for leftovers.  First, I heated up the grill pan and mixed together the marinade.  I let the chicken marinate while the pan was heating up.  Next,  I mixed together the bean salad by mixing black beans, red peppers, scallions, and lime juice.  I added a little salt and pepper for flavor.  I grilled the chicken on a grill pan for about 10-15 minutes.  To plate, I put each chicken breast on a bed of brown rice, drizzled with lime juice mixture, and added a side of bean salad.  We both really liked this dish and it's definitely something that I will make again.
