Pin a Day: Crockpot Steak Fajitas

Another new recipe we've tried lately is Crockpot Steak Fajitas.   Crockpot recipes are really useful on days Mike works or in the summer when I don't want to heat up the kitchen.  I also love that it makes plenty of leftovers, too.  First, I cut my steak( I used top sirloin) into small pieces and marinated it for about an hour.  Meanwhile, I got my other ingredients ready for the crockpot.  I added diced tomatoes, chilies, garlic, jalapeño, and cilantro in he crockpot.  Next, I put the marinated meat on top.  I added some Penzey's fajita mix and onions and cooked on low for a few hours. Then, I added some red peppers and and cooked for another couple of hours.  We served it with shredded cheese and sour cream on tortillas.  The meat was tender and flavorful and the fajitas were so yummy.  We also used the meat for nachos the next day and they were great, too. This is definitely a recipe I will be using again and one that Mike could probably make if I was at work.
