Even though we've had a pretty mild summer, I still like to avoid heating up the kitchen with too much cooking in the oven. So I found a this great recipe for Six Can Chicken Tortilla Soup. I do not like canned chicken so I cooked two chicken breasts and added them in with the rest of the ingredients. I let the soup cook about 3 hours in my crockpot and served it with shredded cheese, sour cream, and tortilla chips. I thought it was good, but could use more seasoning. Mike liked it ok, but said some of the other soups we've had were better. This was fine for dinner, but next time we will probably try out a different recipe.
