Another recipe I tried between vacations was Lemon Chicken Romano. It was a fairly simple recipe. I like that I used smaller chicken pieces to help with portion control. I had forgotten to buy lemons, which makes a lemon recipe complicated, but not impossible. I did have lemon juice and lemon pepper so I used those as substitutions. This was definitely an easy recipe to prepare and was almost a little bit like a grown up chicken finger (which makes Mike happy). While the chicken was baking, I made green beans and risotto to complete the meal. Upon tasting, this was definitely better than chicken fingers and I can see it easily becoming a quick meal time fix.
