Dream Dinners: Pulled Pork BBQ Sandwich on French Rolls

Due to the holidays, poor planning, and a little bit of illness, I am still playing catch up with my December meals.  However, I should finish them up this week and finally get to start on my January meals.  One such December meal was the pulled pork sandwich.  Mike and I really love the Dream Dinners pulled pork, so I knew this would be a great meal.  I started by preheating the oven for tater tots, which I served as a side.  Once the tots were midway through the cooking process, I started working on the pork.  I cooked the pork in a skillet for about 12 minutes on medium heat.  Towards the end of the cook time, I put the rolls in the oven to toast a bit.  We scooped 1/2 cup of the pork on each roll, plated with tots, and dinner was ready.  This was another tasty meal that cooked super fast.  Once again, the pork was delicious and the mustard in the sauce gave it a really great flavor.  It’s always nice to have meals that can be made in under 30 minutes and this meal fit that category well.  I look forward to eating the rest of my December meals and finally getting started on January meals this week!
