Dream Dinners: Cantonese Beef and Broccoli over Rice

This was the meal that we almost didn’t get to eat.  Apparently, there was a bit of a broccoli shortage in California after periods of too much rain.  We were a little worried we might run out of broccoli for customers, so we saved our meals for until all the customers got their broccoli.  We lucked out and were able to get to make this meal.  Mike and I love most Asian cuisine, so I had high hopes for this meal.  I started off by making the rice.  I put the rice and water in a pot and brought it to a boil.  Next, I stirred it, covered it and simmered on low for about 20 minutes.  While the rice was cooking, I heated up some oil in a pan.  I added the beef and sauce mixture to the pan and simmered it for about 5 minutes.  I added the broccoli and sauce mix to the beef and cooked it about 5-7 minutes until the broccoli was warmed through.  I cooked it a bit longer than I originally expected because my broccoli was still a little bit frozen.  Once the rice and beef/broccoli mixture were done cooking, we were ready to serve.  We plated the rice and covered it with the beef/broccoli mix.  This was another winner.  It was yummy and fairly quick to make.
