Dream Dinners: Sausalito Chicken Flatbread
Once again, I am playing blog catch up. I caught a nasty cold last week and my poor brain was not in prime writing mode. I must have been pretty pathetic one day because Mike actually cooked one of the Dream Dinners meals. His only request was that I read him the recipe, as it was pretty small. On Tuesday, he made the Sausalito Chicken Flatbreads, which we paired with a salad. He started by putting the flatbreads on a baking sheet and sticking them in the broiler for a few minutes on each side. We used the low setting, as our broiler tends to overdo things a bit. Next, he heated up some oil in a skillet and added the seasoned chicken mixture, cooking it for about 5 minutes. On each flatbread, he spread the spinach artichoke mixture, cooked chicken mixture, and cheese. He broiled the flatbreads a few minutes until the cheese was melted and bubbly. These were simple and very tasty. It was a very gourmet concept for pizza that was done with ease. Mike got to experience how easy the Dream Dinners meals are to make and I got a yummy dinner. This meal was a winner in our house and the leftovers were quite tasty, too!
