Pin a Day: Pork Carnitas
On a work night, crock pot meals are the way to go. A perfect example of that would be these Pork Carnitas. Mike chopped up some onions and we added them to the crockpot. Next, I put in a large pork tenderloin. I seasoned it with bay leaves, cayenne, chili powder, salt and pepper. Next, I poured in a can of Rotel tomatoes and a jar of green chili salsa. I turned it on low for about 6.5 hours. Mike shredded it right before he was ready to eat and served it on tortillas. It was delicious. The meat was tender and juicy, without being too spicy. The meat was also great as Pork nachos for leftovers. It made so much extra that we had plenty for leftovers and I froze some in its juices for another few meals. While Mike likes things a little spicy, this was a great starting point, where you could easily add more heat. This has definite potential to become a favorite in our house!
