Pin a Day: Buffalo Chicken Bake

This week in Pinterest cooking has been very successful.  Every dish has been tasty, and this Buffalo Chicken Bake was no exception.   I started by cooking the chopped up chicken breasts in some chicken broth to help retain their juiciness.  Next, boiled my noodles.  Once again, I used the Barilla protein plus rotini.  I put the chicken and noodles in the casserole dish, while I made the sauce.  The sauce included buffalo wing sauce, Greek yogurt, blue cheese, ranch dressing, garlic powder, and cheddar cheese.  I cooked it on low heat until it was combined and smooth.  I poured the sauce on the noodles and chicken and stirred it until well mixed.  Next, I topped it with cheddar cheese and Panko bread crumbs. I baked it for 25 minutes at 375 and then topped with scallions and a drizzle of buffalo sauce.  The results were great.  It had a great flavor, made plenty of leftover, and was relatively healthy.  If you're a fan of all things buffalo, like we are, give this recipe a try!
