Yesterday, I had the day off so I had some time to try out a new recipe. I decided to try out this recipe for Greek Marinated Chicken. I started yesterday morning after breakfast by marinating the chicken in a mixture of Greek yogurt, lemon juice and zest, olive oil, oregano, salt, and pepper. I let it marinate in th fridge all day. About an hour before dinner, I preheated the oven to 375 and put it in a glass dish to bake. The chicken breasts were pretty thick so I cooked it for a full hour.
About 20 minutes before the chicken was done, I prepared some couscous and got a salad ready. The chicken turned out great. It was tender and juicy with a great flavor. This would also be great as part of a salad or sliced up in a pita. I have a feeling this will become one of our go to recipes in the future.
