Friday was a stormy, wet and cooler day in Austin. It was the perfect day for soup. I decided to try this recipe for Fully Loaded Baked Potato Soup. I loved that it was a healthy recipe from Hungry Girl and that it was fairly quick to make. Mike chopped up an onion while I cooked and mashed up the potato. Next, I cooked my garlic and onion in a little bit of olive oil. I added in my chicken broth and milk. Then, I added in the flour, whisking it until it completely dissolved. Finally, I added in the potato and all remaining ingredients. I brought it to a boil and let it simmer for a few minutes. We topped it with bacon and cheese and served with salad and pretzel rolls. I wanted to love this soup, but it was only okay. It definitely didn't compare to my favorite, Houlihan's baked potato soup. So, I will be heading back to Pinterest for a healthy, fast, and tasty potato soup recipe.
