Pin a Day: Crockpot Lemon Chicken
Oh lazy Sunday, how I love you! What better way to enjoy than by crocking and baking. The first thing I made was Crockpot Lemon Chicken. This recipe should have been really easy to make, but I had a kitchen disaster on my way to prepping it. I opened the fridge and my chicken had leaked goo all over the shelf and down into my produce drawer. I felt like I had to clean up that mess before starting a new project. Once that was cleaned up, I melted the butter, added the lemon pepper and soup, and put everything in the crockpot. I turned the crockpot on low and set the timer for 5 hours. I was baking, cleaning, and exercising and it took a long time to smell anything. In fact, I didn't notice until I saw Cecil stick his nose up in the air. With about 30 minute left, I started my green beans and rice on the stovetop. We served the chicken on a bed of rice and it was so tasty. This chicken would also be great shredded. I was pleased by the light lemony taste. It paired well with green beans and will definitely be added to our fall favorites.
