After some time making old favorites, I started making more pinned recipes. One of the first I tried were these Creamy Chicken Enchiladas. I have tried many different enchilada recipes and most of them are okay, but these were really good. I also liked that they were really easy and a Weight Watcher recipe, so they were pretty healthy too. The biggest thing I changed was the amount of time I cooked the enchiladas in the oven. It called for 30-40 minutes, but I probably cooked it for 20-25 minutes because the chicken was already cooked and we were getting hungry! I also replaced the whole wheat tortillas with the carb control variety. This was definitely a success and will be my new go to enchilada recipe!
