I worked on Halloween and had a little bit of time before the trick or treaters started visiting. I found this recipe for Crockpot Lemon Pesto Chicken. I decided to modify it a bit to make it a quicker meal. First, I cooked my chicken in a little bit of chicken broth while I boiled my pasta. When the chicken was completely cooked, I squeezed the juice from a lemon on it and added a small jar of pesto sauce. We served the chicken and sauce on pasta and were able to eat quickly. This meal was quick and easy, but honestly it wasn't anything special. I'd make it again if I needed something on the fly, but I won't be making plans for this meal anytime soon.
