Pin a Day: Roasted Carrots

In our quest for healthier eating, I've decided to include more vegetables.  We like vegetables so this shouldn't be too hard.  However,  sometimes eating vegetables the same way every time gets a little boring.   Obviously, I've turned to Pinterest to help find some new ways to cook our favorite vegetables.  I opted for this recipe for Roasted Carrots.   This was a very simple recipe that yielded some tasty results.  I started by heating my oven to 400 degrees and lining my pan with aluminum foil. I placed the carrots on the pan and seasoned with salt and pepper.  Next, I drizzled some olive oil on the carrots and cooked them for 20 minutes.  I pulled them out and drizzled the carrots with a bit of honey and balsamic vinegar.  I cooked them 5 more minutes and then dinner was ready.  The results were a sweet and tangy carrot that was nice and crispy.  We really liked these carrots and plan to try this recipe using different vegetables, such as green beans or broccoli.  This is a great way to add vegetables to your meal without sacrificing flavor.
