Pin a Day: Broccoli Chicken Salad

We've been trying to eat a little bit healthier this year, especially during the weekdays.  I've been using Pinterest as a resource to help make that happen.  On Monday, I tried a new recipe for Broccoli Chicken Salad.   This recipe was just okay to me.  I feel like I either had too much broccoli or not enough dressing.  I started by cooking my chicken breast and then shredding it.  While I was waiting for it to cool a bit, I got. The rest of the ingredients ready.  In my large glass bowl, I added 3 cups broccoli florets, 1/4 cup diced red onion, 1/3 cup craisins, 8 slices of chopped bacon, and my cooled, shredded chicken.  Next, I mixed the dressing of mayonnaise, vinegar, and sugar.  I poured the dressing on and mixed it. The ingredients were all things I like, but I just felt like it was a little dry.  Maybe, it needed time to soak up the dressing or maybe I should do 1.5 recipe next time.  I would give this recipe another try, but definitely with some modifications.
