Pin a Day: Slow Cooker Chicken Curry
I love my husband the most. The recipe I made last week is proof of that. Again, I was having a rough week last week with a sinus infection and then a reaction to a common medication, but I needed a little something to distract me. So, I made him this Slow Cooker Chicken Curry. Mike really likes curry and orders it at many Asian and Indian restaurants. I don't mind curry, but it's not something I typically seek out. However, I was pinning on day and found one that seemed easy, so I gave it a try. The recipe called for chicken thighs, but those aren't really my favorite so I used chicken breasts. I cut them in half because they were pretty big and added them to my crock pot. To the crockpot, I added a jar of salsa and 2 TBSP of curry powder. I cooked it on low for about 8 hours. I realized the thing I don't love about curry is the smell, which is unfortunate because it's pretty strong. About 30 minutes before serving, I made some rice. It turned out great, the chicken was tender and falling apart and the flavor was wonderful. While it's not necessarily my favorite, this is a recipe I'll make again because I love my husband.
