Pin a Day: Chicken Yakisoba
Sometimes, I feel like an expert in the kitchen and so I ignore or change some of the directions in a recipe. I'm pretty confident in my skills, so this usually turns out okay. I didn't follow directions the other day when I made this Chicken Yakisoba. Not following the directions meant I didn't get nearly enough leftovers of this yummy dish! I decided to half the amount of ramen noodles because I was afraid 2 packages might make too much. Wrong. I should have made a second package. I started by boiling the water for the noodles. Next, I heated up some oil in my skillet. I cooked the ginger and then added the chicken. Once the chicken was cooked, I added the veggies and cooked them until they were wilted. Meanwhile, I cooked my noodles and mixed up my sauce. I poured the sauce onto the chicken-veggie mixture and stirred until it was coated. Finally, I added in my ramen noodles and realized that I really did need more. It just meant our dish was a little lighter on carbs. We really enjoyed this dish and next time I'll think twice before changing the directions to a new recipe.
