Pin a Day: Buffalo Chicken Taquitos

On Tuesday, I had some time so I decided to try out another new recipe.  We love buffalo chicken, so this recipe for Buffalo Chicken Taquitos  sounded perfect for us.  The step that took the longest was cooking the chicken breasts, but that could have been done ahead of time with careful planning.  After the chicken breasts were cooked, I shredded them with my handy Beast Claws.  Next, I mixed together buffalo sauce and cream cheese (I used the low fat variety) and added the shredded chicken.  I added a couple tablespoons of the mixture to tortillas and placed them on a baking sheet.  Before putting them in the oven, I sprayed them with cooking spray to help brown them.  I baked my taquitos for 15 minutes and they were ready to go.  You could probably bake them with a little bit of cheddar on top as well.  This was a great quick way to get our buffalo fix in for the week and with the lower fat cream cheese, it wasn't terribly unhealthy.  This recipe will definitely be added to the favorites category.
