Pin a Day: Oatmeal Snickerdoodle Muffins

Tuesday was another baking day for me and I opted to try out a new recipe.  I wanted to make enough to share with friends at trivia on Wednesday, but not so many that I had too many leftovers.  So, I tried out this recipe for Oatmeal Snickerdoodle Muffins.  I knew they'd be a hit with Mike because he loves snickerdoodles and I thought that the oatmeal would be a great addition and make them a little bit healthier.  I whisked together the dry ingredients in the stand mixer after preheating the oven and putting muffin liners in the muffin tin. Next, I mixed together the eggs, milk and vanilla.  I poured the wet ingredients into a well formed in the dry ingredients and mixed them until just a little flour remained.  Finally,  I added in the melted butter and mixed it until fully incorporated.  I had enough batter for a dozen and a half muffins, which seemed like the perfect amount.  I sprinkled them with a cinnamon sugar mixture and then I baked them at 375 for 15 minutes.  They smelled delightful and tasted great with our afternoon coffee.

They were a big hit at trivia night, too.  Unfortunately, they didn't bring us luck and we came in 4th place, but we still had a fun time.  This is definitely a recipe that I will try again.
