Pin a Day: Chicken Parmesan Casserole

We love Chicken Parm.  In fact, it's Mike's Valentine's Day specialty.  I'm always looking for ways to make it quicker, healthier and easier.  I tried this recipe for Chicken Parmesan Casserole with high hopes. It was definitely quick and easy.  It was relatively healthy, but we just didn't love it.  I started by cooking the chicken.  I placed the cubed chicken in the bottom of a greased 8x8 pan.  I then layered pasta sauce, mozzarella and Parmesan cheese, and Panko bread crumbs.  I cooked it for about 22 minutes while I made pasta and salad to serve with the casserole.  The casserole definitely needed the addition of the pasta as it was a little bit runny.  It wasn't bad, it just wasn't the best dish I've made.  Here's hoping that my next creation is a bigger success.
