Pin a Day: Ranch Pesto Rigatoni Bake
Last Friday, we continued with the Lenten tradition of no meat on Friday. This time I tried a Ranch Pesto Rigatoni Bake. It was a very basic recipe, which was perfect if I had to work. First, I made the pasta. Next, I added the tomatoes, ranch dressing pesto, and half the cheese to the pasta, and mixed it up. I added it to a casserole dish, put cheese on top, covered it with foil, and baked it. Finally, I took the foil off and let the cheese brown a little bit. I served this with salad. It is a nice solid Italian meal and was perfect for Lent. I loved the flavor the ranch dressing and pesto added. It also made plenty for leftovers. This will definitely be an idea for my next meatless meal. It would also be great with ground beef, ground turkey, or sausage added to it.
