Pin a Day: Crock Pot Creamy Chicken Tacos

Wednesdays are the day Mike typically works in the office, so those are usually crock pot days for us.  That way I can throw something in the crock pot at lunch time and by the time I get home with Mike from Austin's traffic, dinner is ready.  Last Wednesday, I tried these Crock Pot Creamy Chicken Tacos.   This recipe was super easy and delicious.  I put my chicken breasts and a can of Rotel tomatoes in the crock pot for about 6 hours on low.   When I got home, I shredded the chicken and added half a block of cream cheese (I used the low fat version.) on top and let it cook for 30 minutes.  After 30 minutes, I stirred the cream cheese into the chicken.  We served it on flour tortillas with fresh cilantro, cheddar cheese, and lime juice.  It was so yummy!  We like things to be a little spicy so next time I may use the spicy Rotel tomatoes.  Otherwise, this is a perfect addition to our favorite foods.
