It seems that I always plan my menu when it's cooler and by the time I make and eat things, it's warmer. This Cheesy Taco Soup recipe followed that current trend. What I liked the best about this recipe is that most ingredients are always in my pantry. The other cool part was that I only used 2 pots. I browned the meat in my big soup pot. Next, I made my roux and added in the cheese. Finally, I combined all the ingredients and waited until they heated up all the way. We garnished our soup with cheese and crushed tortilla chips. It was really good. This was a fast, easy soup that had a little bit of a kick to it. It would be perfect for a cold day, but it wasn't bad on a warm day either.
