I love soup. Its easy to make, makes your house smell good, and usually provides plenty of leftovers. So I was really excited to make this Chicken Meatball and Orzo Soup. I really liked this recipe because it was quick to make. I did have to make a few modifications as I was cooking. Ground chicken was hard to find and pretty expensive, so I used light meat ground turkey instead. I also had a bunch of fresh basil so I added that into the soup. It all cooked pretty fast and then we had some yummy soup to eat. My one comment is that it really didn't have much liquid to it, so I added more before I put the leftovers in the fridge. We really liked the soup and it went well with salad and bread. I noticed when I had the soup for leftovers, that the orzo seemed to soak up all the the liquid so each time I eat it, I will probably need to add more broth. This was a great recipe and allowed us to try something new (orzo).
